1 Bottle of Wishbone Zesty Italian Dressing
1 Cup of Orange Juice
3/4 Cup of Brown Sugar
Juice of 1 Fresh Lemon
Juice of 1 Fresh Orange
1 Teaspoon of Ginger
1 Teaspoon of Cinnamon
1 Teaspoon of Nutmeg
1/4 Teaspoon of Cayenne Pepper
1/4 Teaspoon of Garlic Powder
1/2 Teaspoon of Salt
1/2 Teaspoon of Black Pepper
Mix ingredients well
Clean all white tissue from tenderloin
Marinade meat for at least 24 hours (48 hours works better for me)
While cooking, continue to dunk meat into marinade, making sure to cook at least several minutes after each dunking
DEER MEAT, PORK, CHICKEN (on the grill)
1 gallon mixture
1 hand = 1 tablespoon+
4 large bulbs of garlic, cleaned, both ends cut and peeled … remove any green garlic
3-4 hands of “diamond” white rock salt
4 hands of oregano
3 hands of pepper
3 hands of crushed red pepper
3 hands of paprika
mix all above together, ¼ or ½ the above into pedestal, and grind to a paste, mix the remainder into a paste
add one “T” spoon of olive oil to total paste
Boil 1+ gallon of water, add the above paste to boiling water, let cool, add one shot+ of apple cider vinegar.
Pour into bottles and cap for future use.
COOKING TIME – 4 HRS.
1 – HIND QUARTER – bone on or off, remove muscle and fat. soaked in salt water for 2 days, changing water every 12 hours, add ice to water if the temperature is warm.
1 – 16 oz. bottle of Kraft Thick – N – Rich BBQ sauce
1 – 16 oz. bottle of Sauers BBQ sauce
2 – large onions cut up
1 – 32 oz. apple cider vinegar
Hot Sauce, salt, pepper
Large Pot – ½ full of water, add hind quarter, 16 oz. of Kraft Thick – n - Rich BBQ sauce, quart of vinegar, chopped onions,
7 - 10 shakes of hot sauce and pepper and salt – boil on high (3-4 hrs.) until meat falls apart or separates from bone.
Remove 4 cups of juice w/ onions – set aside
Shred meat while warm – add 2 cups of juice w/ onions + 16 oz. of sauers BBQ sauce – stir to taste
*** If the hind quarter is large, or BBQ is soaking up juices, add up to 2 more cups of juice w/ onion + 8oz. of Kraft Thick – N – Rich BBQ sauce, and hot sauce to taste.
